Walk behind almost any busy bar and you’ll see it: a bartender leaving the well mid-rush to grab something from the kitchen freezer. Bar menus have grown, with frozen garnishes, frozen cocktails and more bar food, but most back bars were built around beer, wine and ice, not below-zero storage.
The problem: the bar menu grew, the freezer space didn’t
Today’s bar programs lean on frozen product, from fruit for frozen drinks to specialty garnishes to food served at the bar. When the only freezer is in the kitchen, every trip to it costs time, pulls staff away from guests and puts more traffic in the back of house.
The obvious fix, adding a freezer behind the bar, runs into the obvious obstacle: the back bar is already full, and every inch is spoken for.
Why it matters: steps, speed and the guest experience
Behind the bar, steps are service. Every trip off the line slows drink times, and slower drinks mean longer waits and fewer turns. Forcing a standard-size unit into a space it wasn’t designed for can also mean awkward reach, doors that fight with traffic, or a finish that doesn’t match the bar the owner invested in.
How Glastender’s Minus 5 Freezer helps

Behind the bar, the best upgrade is the one that fits the run you already have. Glastender’s Minus 5 Freezer brings foodservice freezer performance to the bar, in a configuration built for your space. Glastender says there are more than 1,000 possible combinations:
- Widths: 24″, 28″, 36″, 44″ or 48″.
- Heights: a 35″ bar profile or a shorter low-profile option for tighter spaces under the bar.
- Tops: no top, 1″ finished stainless steel or a perforated drainboard.
- Access: solid doors, glass doors, panel-ready doors, laminate doors or drawers.
- Handles: Signature, tab or tube.
- Drawer pan inserts: optional on drawer configurations, so frozen product stays organized and easy to grab.
In Glastender’s words, the Minus 5 is “Built for the Bar. Engineered for Below Zero.” From compact installations to larger bar setups, it’s designed to put below-zero foodservice storage where you need it.

A back-bar freezer planning checklist
Before you choose a configuration, work through these:
- Measure the open run. Note the exact width available, then match it to the 24″–48″ options.
- Confirm the height you need. Bar profile or low profile depends on the underside of your bar top or work surface.
- Decide what sits on top. A finished top, a drainboard or nothing at all, based on how the space is used.
- Choose doors or drawers by what you store. Drawers with pan inserts suit small, frequently grabbed items. Doors may suit bulk product.
- Match the bar’s look. Panel-ready or laminate doors can blend into the bar’s finish, and glass doors put product on display.
- Think about traffic. Pick door swing, drawer placement and handle style so they don’t collide with the bartender’s path.
- List what goes in. Garnishes, frozen-drink ingredients, bar food: plan capacity around the real menu.
Segment notes
- Bars and nightlife: Speed at the well is everything. Freezer storage within reach keeps bartenders on the line.
- Restaurants with bar programs: Frozen cocktails and bar menus grow fastest here, and a matched back-bar unit keeps the dining room’s look intact.
- Hotel and club bars: Panel-ready and laminate finishes help equipment blend into high-design spaces.
E-Source Miller’s take
Good bar design is about putting what bartenders need within reach, and keeping everything else out of the way. The Minus 5 stands out to us because it starts from your space and builds the freezer to fit it, not the other way around. That’s the kind of practical flexibility that helps a bar program grow without a remodel.
